Sexy Red Wine Lentil Soup

1 lb. Red Lentils, well washed.
4 Medium Carrots, peeled.
2 Red Bell Peppers.
2 Small Beets, peeled.
1 T. Ground Ginger.
1/2 T. Ground Garlic.
6 c. Water
2 c. Red Wine.
6 oz. Tomato Paste or 14 oz. Stewed Tomatos.
1/4 c. Cilantro Leaves.
Chop the carrots, bell peppers and beets into small pieces and puree
along with the tomato, ginger, garlic and wine. Combine puree, lentils
and water in a soup pot. Bring to boil and simmer for 45 - 60 minutes.
Pull about a quarter cup of cilantro leaves from a bunch and mince finely.
Crush the leaves with olive oil in a mortar with a pestal. Drizzle on top of
the soup as a garnish.
